Whenever I use my Wireless USB Logitech Headphones, the Musecore play button is greyed out even though it is set as the default speaker. However, when I change the speaker to my PC, it isn't greyed out anymore. I would like to get it to work with my headphones.

Usually it works best to connect the USB devices before starting MuseScore. But also, it may work to go to Edit / Preferences / I/O and select the correct device there, and/or hit the "Restart Audio and MIDI Devices" button.
