Go to note entry mode
select a duration (e.g. 3 for 1/16th)
enter a rest, then a note (both via the keyboad, e.g. 0 for the rest, c for the note C).
the rest is now overwritten

workaround: before entering a note, manually advance the cursor...

This works as expected for me, unless maybe you are referring to tablature? Rests work differently there - semicolon is the rest shortcut. But it is indeed currently not working, so the workaround is, enter a note then hit Delete. And yes, in tablature, it is by design that the cursor does not advance automatically - not when entering notes either (because so often you might need to enter an entire chord).

If you continue to have trouble, please attach your score and tell us which measure you are trying to enter this into - could be a corruption or other problem specific to that measure of that score.

It sometimes works, but not always. It would seem that when an existing duration is split to create a rest symbol of the desired duration, then 1 or more rest symbols are shown directly after it, to fill the bar. It is in this situation that pressing a note will overwrite that rest that was entered.
I can reproduce this 100% by clicking on the rest symbol of a pristine bar, then pressing e.g. 4 (for 1/4 notes/rests), pressing 0 to add a 1/4 rest, then pressing e.g. d to add a D-note. This will overwrite the rest that I just added.
