In Insert mode, press = on German keyboard (i.e., Shift-0), and then e.g. C - there is no natural sign in front of the C.

Comments

(Also, setting the shortcut again does not make it work [I had hoped ...]).
Workaround: Use some other shortcut; many also do not work (e.g. Shift=-, i.e. underscore; or control-0 - these are actually also bugs). After some experiments, I found that Shift-Alt-0 works, for whatever reason.

... to complete the rudimentary information about the "shortcuts,xml" workaround (took me about 15 minutes to find all this, as it is not documented anywhere, and the search function here gives you loads of answers not telling you what you need to know; the single answer about the location of the file, for example, had a typo in it, which made it unusable for non-Windows-freaks like me ... no, not everyone knows that it should obviously be ... and not ...):

a) The file is located at %LOCALAPPDATA%\MuseScore\MuseScore4 (you can open a file explorer and paste this path into its "Schnellzugriff").
b) You need to search for "nat" (not "natural", as one would assume; no idea why they saved those 4 letters);
c) The shortcut for the German keyboard is then "Shift+0".
