How to hide un-playing instruments
How do you hide instruments that aren't playing? I remember before that I was able to do it, but I can't seem to find the button for it.

Via Instruments (F7), select the instrument press the eye icon

If you mean hiding them on the systems where they don't play, Format > Style > Score > Hide empty staves within systems.
If you want to hide the instrument altogether, you control visibility via the Instruments panel, as mentioned.
