Playback/writing for transposing instruments

I have played saxophone for a while but a long time ago, one thing I remember is that when someone gave me sheet music for trumpet/other concert pitch instrument I first needed to transpose the music in order to sound correct.

When I write music for transposing instruments like the saxophone family,
how do I need to write it in order to hear the "correct" sound when I use the soundfont playback,
and play the "correct" sound when I try to make music again with my baritone sax?

The playback is really helpful since I used to play alto - and am only getting into reading bass clef.

Set up your score with the instruments you want. Hit the NEXT button. Select the meter and overall key for the piece. Maybe select "C Major" as a test. Select DONE and your score will open with the parts in the proper key. In the bottom right of the screen, select Concert Pitch. I do this so that I don't have to transpose as I write. Not everyone does this. When you are done turn off Concert Pitch and all parts are transposed.
