Hi, I would like to know if I publish an original score for orchestra through Musescore.org my rights as a composer are protected or I risk my music to be stolen and played without my permission.

You probably mean to publish it though musescore.com
Yes, of course you risk the music to be stolen (you could prevent download though, if having a Pro account, seems you do) and played without your permission, it'd still be a copyright violation which you could follow up with a lawyer...
