First example looks like 6/8, second example looks like 4/4.
So, first use the appropriate time signature; see https://handbook.musescore.org/introduction/create-your-first-score and https://handbook.musescore.org/notation/rhythm-meter-and-measures/time-…
If you then want to have different beam grouping see https://handbook.musescore.org/notation/rhythm-meter-and-measures/beams
Click on the time signature and change its properties:
