Sarebbe possibile porre per impostazione iniziale che la notina di partenza del bending abbia sempre l'aspetto dell'acciaccatura per poterla distinguere dal meno usato prebending che non ha il gambo?
Inoltre, è possibile fare in modo che i diagrammi degli accordi per chitarra siano orizzontali per impostazione iniziale e che vengano riprodotte le note riportate sui diagrammi prescindendo dai nomi degli accordi scritti su di essi?

That said, the starting note of a guitar bend is usually set as a normal note because that is the pitch that is 'fixed'; the note bent to (or from, in the case of a pre-bend) can be fluid and the number beside the bend symbol is merely a hint at how much to bend the note.

Still, if you wish, there is actually a "Grace note bend" in the Guitar palette. It actually has playback, unlike the "Pre-bend". The tab it generates indicates the starting note, as do all the bends, even the "Pre-bend", for which it is incorrect.

On your second question, the standard orientation for fretboard diagrams is upright. It might have been better to have turned them horizontal long ago when they were invented, but that's the standard now. I suspect it may have been because left-handed people play the guitar too? If you want to turn them on their side, go ahead, but don't expect anyone else to be able to read your music. :-)

Select a fretboard diagram. (If you need to select multiple, you can multi-select with Ctrl+click, or you can right-click a fretboard diagram and, from the context menu that appears, click on Select / Similar.)

Go to the Properties panel (upper left). Under Fretboard diagram, click the Settings tab. Then, under Orientation, click the Horizontal button.
