How do I change the copyright data?
when I set up in the beginning, it is pretty easy to input whatever I want. However, if I want to change anything, I can't seem to find a way. Any suggestions?

It's almost impossibly difficult to figure out, but simple once you know how it works. Go to File -> Info and fill in the copyright information. Then, if you want to, you can change some settings in Style -> General… -> Header, Footer, Numbers, and perhaps also change some formatting in Style -> Text… -> Footer.
