Editing note lengths
If I enter a pair of notes as a dotted pair (first a dotted quaver, second a semiquaver) and decide later that they should both be quavers, how do I do this edit? It's easy if I've just entered them - I can undo/redo. But what if it's in the middle of a completed piece?

Just rewrite over the two notes using quavers.
