How to define dynamic (f/p) duration while playback
I've added a "forte" dynamic onto a note but, on palyback, it span till the end of the score.
Is there a way to define till when the dynamic apply (es.: 2 or 3 measures) so that it than playback without it?
Or, in other words, how to restore dynamic to its initial value?

The default velocity in MuseScore is mf, "mezzo forte", so to cancel a "forte", apply an mf at the spot where you want to go back to the default, 'normal' velocity.
And no, there is no method available to resctrict any od the dynamics to a range of notes or measures, other than the above mentioned one.

It's probable a good practice to put a dynamic at the beginning of you score so that the musician who will read the sheet music knows how loud to start.

Thanks a lot for all your answers. I'm transcribing this eraly music score and third measure is no more "pian.", I'll use Jojo-Schmitz tip.
Standard music notation calls for any dynamic marking to affect all notes from that point until the next dynamic marking, so that is what MuseScore does. The only exceptiosn are special markings like sfz, which indicates that one note only is to be played louder, or fp, which indicates the note is to be played loud but then immediately drop in volume. MuseScore doesn't support automatic playback of either of those, but you can achieve the first easily enough by simply setting the velocity properties of the note in the Inspector.
