It's unlikely any soundfont would provide a separate sound for that instrument, so you can just use tenor sax and then change the name and transposition n staff properties. But sure, it would also be nice to have it added to the official instrument list.
MuseScore is open source, and as such belongs to the whole user community.
Adding instruments is purely a matter of editing the Instruments.xml file to be found in the MuseScore program directory. The syntax of this file is not over-complicated, and there are enough of us around to give guidance on it should you need it.
So if you require more instruments adding to the list then why not have a go at doing it yourself?
Incidentaly there are 9 ocarinas in the instrument list :)
If you want to see them tick the "Show More" box on the "Create instrument" dialogue.
Yes, this would be lovely. With the 117 available woodwinds, and not being able click on my own baby is quite melancholic. The sound of the instrument is one octave lower than written, and I'm aware that playback is another story. But, would like to see my instrument in the drop down box.
Once you have created your c-melody sax instrument definition I would like to have a copy for the new master Instruments list to be included in version 2.0, and which will be MusicXML 3.0 compatible.
This thread is describing a four-year-old version of MuseScore. I assume you are trying to see the less common instruments. To do so, use the drop down menu at the top - it defaults to Common instruments only. Or just type the name into the search box at the bottom.

MuseScore already has a regular gong. In the new score wizard see Unpitched Percussion > Tam-tam.

Finale and Sibelius list both tamtam and gong.

I think it'd be pretty cool if they added in an ocarina. It's really an underrated instrument.

Finding it is OS specific. but on Windows XP it is at C:\Program Files\MuseScore\Templates
