One way is to click on the time signature and press the letter 'V' to toggle visibility.

and in the image shown, you will find a checkbox 'Show time signature'.
Either of those approaches works as far as making the time signature not show in the score. As far as actually having different numbers of beats in a measure, the commands in Tools / Measure allow you to combine and split measures at will, so you can have exactly as many notes between barlines as you want.
