Either create new, select key signature - it inserts a different one, OR
in existing score, delete the key signature, select click and drag a new one in - it inserts a different one.
eg. I try to insert C maj and I get D maj, or I try F maj and I get G maj.

I think I have figured this out - I am writing for Bb clarinet, so the software is transposing automatically. Very confusing, for me as a beginner.

To make the work easier, you could click the "Concert Pitch" button in the toolbar. That will temporarily disable the transposing.
