How do I write things like "agitato", "a tempo" , 'animato" , etc. on the sheet music so that when I click the play button it actually has an effect on the music?
What exactly ther effect should be is entirely subjective. So we cannot realistically provide a magic command to do exactly what you personally might feel is best for your particular score. We provide the controls for you to set the tempo you want, the dynamics you want, the articular you want, etc. Then it's pretty much up to you to decide what precisely you want to make happen. When you do decide, we're happy to help show you how.
Whenever a score tells me to play it animatedly you don't really hear a difference; but boy is my face doing all kinds of animations during that passage ;-)

What effect would you expect? A change in tempo? Then make it tempo texts and set the desired tempo of them inspector

I imagine it'd be quite difficult to express a concept such as "animato" or "play it animatedly" through just change of tempo.
