how do I also add a roll on a mallet instrument? so it will sound correct on the playback?

Rolls are more technically called tremolo - see the Tremolo palette for that.
Unfortunately the General MIDI standard doesn't include a gong. But if you do a web search you may find some non-GM soundfonts that include such a sound. Similar for voices saying specific syllables. See the Handbook under "Soundfonts" more info on downloading and installing soundfonts.
