This is environnement of the ptoblem :
On a guitar tablature, you affect a note on it. By default the software creates it on the 0 key of the guitar fretboard.
Then to adjust the pitch of this note, i have to press a number button on the keyboard.
In my case all the digits work, except 5.

Well, no, MuseScore does not create new notes on fret 0 nor on string 0. But indeed on the lowest possible string and in the lowest possible fret that is capable of playing that note.
The 5 key on my keyboard works just fine, maybe you assigned a different shortcut to it? Check Edit > Preferences> Shortcuts > Add fret 5 on current string or use F instead

In TAB, when you click on a string in note input mode MuseScore does indeed enter a fret 0 note of the currently selected duration. Whilst still in note input mode the fret number can be adjusted with the up/down arrow keys.

After starting note input mode, selecting a string with the mouse and entering the first note, subsequent notes can be entered by using right arrow to the next position, up/down arrows to select a string then numeric digits for the fret number. So, after the first note don't use the mouse again on the tab stave until you finish note input mode. The mouse can be used for duration selection without interfering with this input method.
