If I add different dynamics for voices 1 and 2 MuseScore shouldn't have them overlap. Best outcome would be voice 1's markings (lyrics, staff text, dynamics, ...) being automatically placed above the staff and voice 2's markings being placed below.

You can't have different dynamincs or hairpins to affect just one voice, see #58031: Dynamics/hairpin range for Voice
but you can move those up, in 3.0 evem by setting a placment poperty, not just by using the element's y-offset

Oh I didn't know that. Despite that it could be helpful to automatically move the dynamics anyway even before their placement in different voices actually does anything, since it's probably fairly clear what that placement is supposed to mean.

I'm using 3.0.0.19686 (on macOS), which I assume is the latest version. It does look like the automatic placement places (somewhat inconsistently) the voice 2 dynamics slightly below the voice 1 dynamics - I saved and re-opened - but they still overlap with each other. Another issue (with the 8va lines) seems to have popped up as well.
It seems like the not-overlapping placement is probably an import issue – pressing "Reset to style default" moves them over each other. See also #280029: Manual adjustments to lines not preserved well on import of older scores when not choosing to reset.
In order to investigate, we would need you to attach your actual score, not just pictures of it. I can say that improvements were made in the last week to try to honor the position of elements better in imported scores, so elements that were manually positioned above or below the staff will now automatically get the "Above" or "Below" placement set. So it's possible that the update that will be released imminently will fix this issue for you.

The issue is still present in beta 3.
It wasn't really a duplicate, but is by design, you can switch to above/below, but need to do so manually.
