Problem still persist in version 3.0.1.
After saving, closing and reopening the score, the instrument for which the stave should have been removed. is displayed double,
The Part can of course be fixed by using Edit/Instruments to remove the staff.

This problem still exists with 3.1.0. Removing the staff via Edit/Instruments technically works, but then you completely lose the staff from the score and from other parts, so it's not really a workaround.
It was never intended that you should be able to remove a staff from an instrument from within the Parts dialog. There is a bug in the UI that makes you think that this is possible. If you press the - button with a staff selected, MuseScore should probably either (a) tell you that you cannot remove the staff from the instrument, or else (b) it should go ahead and remove the whole instrument. https://github.com/mattmcclinch/MuseScore/commit/99c47c0 implements option B.
If you want to have a grand staff in the full score, and a separate part for each hand, you should create a score for 2 pianos: one with only a treble staff, and one with only a bass staff.
