How To Enter Pitches From Different Octaves
https://musescore.org/en/handbook/handbook/basics/note-entry
Here it says you enter pitches clicking the letters; "C-D-E-F-G-A-B"
However you can not specify the octave degrees.
Let's say I want to enter C2 or D7. How to do that?

Enter the note, then change its octave via Ctrl+Up/Down, see https://musescore.org/en/handbook/3/note-input#move-notes-up-down

Is there a shortcut for sharp or flat or can I assign a shortcut for them?

IIRC there is none (other than Up/Down arrow), but you can assign one.

How to assign a shortcut for a sharp?
How to assign a shortcut for a flat?
I couldn't find them (flat or sharp) at "Edit - Preferences - Shortcuts" so that add a shortcut.
