How to add pedal to one note?
If I select a note to add a piano pedal to, then double-click the pedal, it doesn't respect my selection - it just adds a pedal to the whole bar. And while I can short the line visually it still applies to the whole bar aurally.
How can I fix this please?

Select the range containing that note, so you see that blue box.

This isn't some special rule for pedal or for single notes - it's the way to specify the exact range for any line. If you add a line without first telling MuseScore what to add it to, it will pick something which is likely to be wrong a lot, but you can also fix this with Shift+Left/Right, as documented in the Handbook under "Lines".
