Can I preset the stave space so i don't have to change it every time I create a score?

True, so it's important to consider your reasons for wanting non-standard staff size. If it's because you want bigger staves, such as for music for children, then probably a template is the way to go, because you wouldn't want other scores affected. Or if you want smaller staves customized to work well with a particular collection of instruments like a brass choir, then again, a template work best. But also consider whether one of the existing templates already does the job. Or, create a score set up the way you want and have MuseScore open it on startup rather than the usual default score.

But the style option handles other cases well, such as if you are visually impaired and just want everything bigger always. or if you are working for a publisher producing scores of varying instrumentation but they have a house style that calls for consistent staff sizes (either for the score or parts or both).
