how do you change the instrument you wrote piece for?
I wrote the piece in piano but would like instrument one, staff 1 to be saxophone, I don't want it to be piano at all. do I have to cut and paste everything into a new started piece. It was suppose to be saxophone all along. I mistakenly started entering it as piano. Can you change the instrument of staff 1 after you wrote it for another instrument?

Sure, just right click the staff, Staff Properties, Change Instrument.
