Lowering Instruments One Octave
How do I lower a single instrument in a piece consisting of several down by one octave? I've figured out how to do it with just one bar (or note), but I don't know how to do it with every note in the piece on a given instrument.

everything that you want to move (shift click/ctrl click) and apply the mechanism that you now use to the selection.
Click on the first note or rest for this instrument, shift click on the last note for this instrument. You have selected all the notes. Use Ctrl + arrow down to lower by one octave.

for Mac you select the notes you want to transpose and press Command + down.
An easier way to select an entire line of music is to click the first note then press ctrl-shift-end.
