Deleting voices
I know how to add a second voice onto a staff. I would like to be able to select a number of measures and delete all the Voice 2 notes in those measures at once.

Use the selection filter (press F6) and remove the check from all voices you have in those measures except 2. When you select the measures only everything voice will be selected (this includes things like dynamics). Remember to make the check in the 'All' box solid before closing the selection filter.

Is there some reasonable way of finding out about this filter in Musescore itself or is currently the only way to google this?

The entire Handbook is available directly from within MuseScore itself via the Help menu. So yes, you can find the information on this or any topic with no Google needed.
