If you enter an apostrophe as part of a workspace name it is mishandled, e.g. enter "Bill's Options" and the dropdown in the sidebar will show "Bills Options" although the workspace, when listed in the Workspaces menu item is shown correctly as "Bill's Options". This appears to be a new issue in MuseScore 3, the same steps result in no issues in MuseScore 2.3.2.
Steps to reproduce: (a) create a new workspace either using the + button or the Workspaces Menu. (b) Enter "Bill's Options" as the name of the workspace. (Other characters don't seem to cause issues. You get a different kind of weirdness is you enter "The 'best' options" as the workspace name.)

I am unable to reproduce this. The sanitizer code in https://github.com/musescore/MuseScore/blob/master/mscore/workspacedial… does not remove ' at any time. Based on a previous stream of issues, it might have something to do with menus on macOS.
