If figured bass symbols are added to a score using the Master Palette, they disappear once the score is closed and then opened again. This is only a problem in the 3.0 beta version, not in MuseScore 2.
Comments
Symbols from the master palette disappearing is a known problem that is being worked on. You should use ctrl+G to add figured bass to a score. See https://musescore.org/en/handbook/figured-bass and #278472: Symbol (originally from Symbols Palette) disappeared from score
