I pressed 5 on my keyboard to subdivide into quarter notes in a measure, and then command-3 to further subdivide into triplet eighth notes, but after doing so I became stuck permanently in note placement (that is, only being able to place notes down), being unable to swap out of it, be it pressing on my keyboard or the interface.

What did you try? Normally, pressing Esc is how you'd exit note input mode, and this works for me even in the middle of a tuplet. It also should work to press "N" or click the note input button on the toolbar. Can you reproduce this and if so, can you give more precise steps? Here's what I did:
1) default empty score
2) click first measure
3) press N for note input
4) press 5 for quarter duration
5) press Ctrl+3 (Windows equivalent of Cmd+3)
6) Press Esc, or N, or click note input button
Result: note input mode was ended, as expected. Same result if I enter notes betwene step 5 & 6.
