1) right-click an empty bar and select "Staff / part properties"
2) Click on button "Advanced properties"
3) Clic on "Notehead scheme" selection box.
4) For Italin language, the second option "Nome tono tedesco" should be changed with "Nomi toni"

I've fixed the translation (on Transifex, you could do it there too), it'll be in the next release
