Hello,
When I want to add space before the staff (right click on the staff > staff properties > additional distance above the staff), it doesn't work anymore for a new document.

Sample score? Does it have more thaf one part?
Works fine for me. Are you maybe trying to use it for the top staff of the system? That won't work indeed - you would actually just want to increase the system distance.

Here is a file as example; I've chosen 5 for the additionnal distance. As you can see, the first staff stays near the header (whatever the chosen value from elsewhere)

As we guessed above, your score only has one staff. The "extra distance" setting is for scores that have more than one staff, so you can, for instance, more space between clarinet and trumpet and between flute and clarinet, or whatever.
For what you are trying to do - simply adding space between the title frame and first system - you should be increasing the "bottom gap" for the frame, using the Inspector.
