select the chord symbol and open the inspector (press F8) and click the underline button.

I'm on a MAC. after I pressed F8, nothing happened.

F8 toggles (opens/closes) the Inspector panel.
Click on chord symbol see the inspector.
You should see an underlined U symbol.
Click on that.

From my browsing, it looks like I'm trying to find a symbol for a stacked chord.

Look in the view menu for the inspector, the shortcut for a Mac will be listed to the right. Stacked chord symbols require that you enter two chord symbols on a note and underline the top one, using the inspector is the easiest way to underline a chord symbol. FYI, the second chord symbol ends up on top.
