Note, simply select it and "suppr" or "delete"
For rests if they are in voice 1 you can't but you can make them invisible with "V" it becomes grey and invisible if you print

@Spire42 The "Delete" key in a French AZERTY keyboard is named "Supprimer", abreviated as "Suppr"
Supprimer is the French word for Delete.
As mentioned, to delete a note - meaning, replace it with silence, leaving all other notes unchanged, in the same time position they are currently in - simply press delete. A rest is already silent, so there is nothing to delete. Maybe what you really mean is, you want to take some unspecified number of subsequent notes and move them on top of where the rest current is? If so, just do so directly - select the notes you want to move, then cut and paste.
