Octaves
Every time I try to make this one-note attach to this chord:
It switches to the bottom like this and attaches to another note instead:
Any ideas about how to fix this?

Your staves are too close together for this to work with the mouse. I suggest that you use the keyboard to enter the bottom E (or any note that causes this problem). As an alternative, you could use a spacer to separate the staves if you have a few notes on the system like this but I wouldn't suggest that you resort to changing the style settings to make the staves farther apart unless it happens on just about every staff. You can then delete the space or put the staff distances back to normal when you no longer need them farther apart.
Don't use the mouse, but Shift+notename. Or play above and then move down with the arrow keys

FWIW, there is a pending change to improve this, I'm hoping to see it in 3.5.1 or 3.5.2.
