As far as I know it should not even be possible to display the Inspector for generated staff names. Can you attach a score and steps to reproduce? As far as I know it should not even be possible to display the Inspector for generated staff names.
The long instrument name is under text style (the last option) in the Style dialog. Changing the color here does nothing.
