Display size
I am using a MacBook 2012 mojave and musescore 3.5.2.3xxxxxxx revision 465e7b6
I use an HDMI cable to connect to a larger display.
I must disconnect the cable when opening musescore then plug it in to achieve a normal screen. Otherwise the pallets. And note value tool bare are so small that they can not be viewed.
Any other solutions besides unpluging and plugging in HDMI every time?

Create a shortcut to run MuseScore that has -D xxx added to the command to run MuseScore. xxx is the DPI of your larger display. See https://musescore.org/en/handbook/revert-factory-settings for info on how to run MuseScore from the command line so you can test the DPI settings before you put the final number into your shortcut. Then use the appropriate shortcut for the appropriate display.
