Latin percussion
I am interested in scoring a percussion ensemble piece that uses instruments that are not listed in the choices when setting up a score, e.g., maracas, guiro, and castanets. I know how to make the staves say "maracas", but how do I actually get the sound?

You can add all these instruments with the corresponding sound inside the instrument dialogue. Just type the instrument name in the search field or switch from "common instruments" to "all instruments" there.
In case you want to use another sound, you've to find and install another soundfont: https://musescore.org/en/handbook/soundfonts-and-sfz-files.
