Pedal not having any affect after it being lifted and pressed again for a bit (In case of Legato Pedaling)

I don't know how to explain this without examples so, I've attached some files so you can see them for yourself.
I don't know if it only affects me or everybody.

My version is 3.6.2.548021803.

In what sense do mean it doesn't have any effect? I see it on the score - the main effect a notation needs to provide - but also it does work just fine for playback. In your first example, try deleting every other note (leaving rests between the remaining notes) to convince yourself it really is playing back correctly.

Maybe you are using some sort of non-default soundfont or external MIDI device? I have heard of some that don't handle pedal changes well.

I actually tried reverting it to factory settings and it started working again, IDK what actually happened there, but okay...
