Adding a half rest
I am only able to add quarter rests and cannot figure out how to enter half rests. I am a new user taking a theory class with Berklee. Any help on this would be appreciated! I have watched the videos - does not address my question. I use a Mac Big Sur 11.4 .

Select the duration, 6 in this case, then add the rest, 0.

You can add any type of rest, same as any type of note - simply select the desired duration on the toolbar before adding the rest. You can add the rest using the shortcut 0, or by right-clicking, or using the special rest icon if you have extra time to kill :-). BTW, not sure which videos you watched, but the official Handbook definitely explains how to enter notes and rests, as do most tutorials videos I know of.
