Note head names in wrong places
After the last update the note heads with note names appears to be way off and it also adds note heads to the tab.
Is there a way to fix this?

Any reason to have hidden the real notes and adding those noteheads as symbols instead of just changing the noteheads themselves to this style?

MuseScore 2 and the https://musescore.org/en/project/add-note-name-noteheads plugin ;-)
The original looked like the scanned file and when I open it up in the updated version of musescore it lookes like the screenshot. I did not edit that at all.

Score got created (ot last saved ) with MuseScore 2.0.2, that didn't have notehead schemes, but used a plugin to 'emulate' this using staff text. In MuseScore 3 this a) doesn't work properly anymore, probably due to colision avoidance, but, more importantly, b) isn't needed anymore at all, see https://musescore.org/en/handbook/3/notehead-schemes

The problem for me is when I was about to add some thing to the score it's easier to redo it all because of how it looks now and I already did it once (lazy, I know :-)

You could continue to use MuseScore 2(.3.2) in this score maybe?

Although it is easy enough fo fix and much better and less error prone in MuseScore 3

BTW: using a linked tab staff reveals that the notes and the tab are not in sync, esp in measure 11/12
Check the attached, the red notes corrected
