The basic problem is that when playing music back, the dynamics and articulations are affecting other parts of the same instrument.
1) Use multiple staffs of the same instrument
2) Write music in each staff (can be as simple as a held note)
3) Put an articulation of dynamic change (including a crescendo or decrescendo) on the music in one staff, where there is also music in another staff
4) Playback the section

Select the dynamic then look in the inspector at the Dynamic Range. This defines what is affected by the dynamic and can be set to Stave, Part or System. Setting to Stave means the dynamic will affect only the stave it is attached to; setting to Part means the dynamic will affect all staves related to a particular instrument - this is the default for a multi-stave instrument like piano; setting to System means the dynamic will affect all staves of all instruments.
