Header block text
I am trying to edit the information at the top of one of my scores. I thought I had managed to find where this information is stored by going to “Score Properties” in the File menu (apparently the same as Project Properties in the online help?). When I get there, however, the information doesn’t match what is on my score. The field for “workTitle” doesn’t match what I have displayed in the title, although I believe it is the original title that I gave it when I first created the document. My name is shown as both composer and lyricist in the Score Properties box, but one of these (whichever on is on the left on the score) doesn’t show on the score. Most importantly for the current purpose, there is nothing showing on the line underneath the title—the line that would be the “Subtitle” when creating a new document. I wish to insert some text here, but I cannot access it by simply clicking on the screen. How do I get to the subtitle, and, in general, how do I make sense of this information?

I guess you'd don't mean header, but title frame.
The data in Project properties (not sure where you see it being named Score properties, MuseScore 3 maybe?) and the title frame are only 'in sync' directly after score creation, the corresponding fields from the New Score wizard are entered into both

Yes, I have MuseScore 3. Is there a newer version? I'll have to check. Do you know how I can access the blank subtitle line so that I can type something there?

Yes, there is 4.1.1 meanwhile
Right click into the frame, add subtitle
