Edit Triplets
At the moment, the -3- is underneath the 3 notes in amongst the Lyrics. How do shift it to sit over the notes?

Better shift the lyrics, by tweaking their style or the score settings to have more distance between staff and lyrics. You can also change the vertical offset of the tuplet bracket, in Inspector
Preusmably you don't want to move just the number, but rather, the bracket as well. To flip triplets and other elements above/below the staff, click then press "X", or use the Inspector to set the Direction to Up. You can do this for all at once by right clicking one, Select / All similar elements, then setting the direction.
