Hi, when I create a new score and choose a Key Signature (A,E,etc - having sharp/flat or not) pressing double click over the KSig in the score the option selected was not the one I picked.

If the Instrument is a saxophone (like your username implies), this would be normal and by design, as that is a transposing Instrument. Hit the 'concert picth' button to check whether it makes a difference.
Indeed, this is by design. In the unusual case where you happen to have a "score" for only a single instrument, it might intuitively make sense to be able to add the transposed key, but in a more typical score that contain multiple instruments, it's more clear why it makes sense to add the key just once in concert pitch and have MuseScore transpose it for you appropriate for each staff.
