When inputting a second voice, should the stem of the first voice flip automatically?

Using 1.0.0 pre-release 2 (3949) and Mac 10.4.11.

Yes. At least if it had been down first

But: which voices have their stems up or down, can get configured:
Style > Edit General Style ... > Voices
