Cymbal to Glock
I'm writing a score where I want a cymbal to change to a glockenspiel. I need to find a way to also change the number of lines from 1 to 5, and to change the clef from a rhythm clef to a treble-8 clef, which it will not let me do. Is this possible? If so, how do I do it?

Workaround: Add the instruments you want;
Style/General.../Score> Hide empty staves
Create two separate instruments. Then use the "Style ->General ->Hide Empty Staves" feature

You can select on an individual basis the behaviour of staves with regards to Hiding. Right-click ->Stave Properties ->Hide when empty.

That's in the nightly builds for 2.1 only. For now in 2.0.2, the solution is.tpmset.thw Never Hide option on other staves in that same dialog.
