Musescore disappearing from Apple computers
I have 2 composition students who have successfully downloaded and used Musescore. However, the next time they tried to start the program, it had disappeared. Their saved files did not disappear.

We need more info: Mac OS version? Did they try to install MuseScore again and hit the same problem? If the problem cant be reproduced at their side, it will be hard to solve the problem.
If this is at a university, I'm going to guess it's like it is both of the universities where I teach: ordinary users are not allowed to install programs. You can try, and it will appear to work for the rest of the day, but overnight, some automatic program starts up deletes anything that was not installed by someone with the appropriate privileges.

It could be something like Deep Freeze. We use this in many locations around our university to prevent such software from surviving a reboot. Simply put, documents are redirected to a safe location (called "thawspace") but everything else is reset to a clean state.
