Djembe
I know there is no dejembe to select from nor is there a sound font. However, is simply notating this possible in musescore? I don't care what playback sounds like, I just want to be able to notate it.

Offhand I don't see anything that could not be done. Is there a specific aspect of it that you are wondering about? You should be able to create a percussion staff, edit the drum set to define those notes with whatever playback sound you like. then enter the notes normally. Only thing you'd have to do special is hiding the noteheads (press "V") for those notes you want to appear as stem only.

How do I define those notes with whatever playback sound I'd like?

That is what it means to edit a drum set. See the Handbook under “Drum notation” for more info on editing drum sets.

Actually while the Djembe instrument is waiting for Musescore you could also substitute the Djembe w/ Congas or Bongos if you think of this Djembe part of Roger Emerson's arrangement of Over The Rainbow/What a Wonderful World:https://www.sheetmusicplus.com/title/over-the-rainbow-what-a-wonderful-…
Off-topic, but is that the Djembe notation in Who I'd Be from Shrek?
