How to increase stave range on an instrument?
I'm trying to notate some high notes on a piano stave. I've tried right clicking into staff properties and changing the beginner/expert ranges and applying changes but still can't notate any higher than the F 3 octaves up from middle C.

The beginner/expert ranges should not stop you from writing outside of them. Something elsse is poing on.
Try this:
Enter a middle C into the treble clef (top staff), then while holding down Ctrl, press the up arrow 4 times.
You should get pitch C8 -- i.e., the top of the usable pitch range. Yes?
Are you by any chance using the mouse to click on the staff to enter notes?
Happens if entering notes via mouse, at a certain point the notes go to the staff above or below.
Enter them more 'centrally' then move using the arrow keys

Ah, got it, you deemed your comment unnecessary, not mine ;-)
I changed a stave to be 1st violin from being Soprano, but the ambitus has not changed.... Is this a bug?

An ambitus shows the min. and max. pitches really used in a staff, not its theoretical usable range.
Also you'd need to refresh it if you added notes outside its range, it doesn't do this automatically
