Convert notation into tab
Is it possible to convert a full notation sheet into tab?
I'm able to convert the guitar and bass but I would like to do it for all instruments?
Any help would be appreciated.

Tab doesn’t make sense for all instruments, only for plucked strings

What do you mean by "all instruments"? Can you imagine a flutist or a pianist reading guitar tablature?
Using the example of an original flute or piano score, you must first "Change instrument" in the staff/part properties, so for a guitar e.g. From there, in the Instruments dialog (shortcut "I"), you can associate a TAB taff (linked or not), or simply make the choice to display only a TAB staff.

Which won't work (if not changing instrument first), as those instruments' definitions are lacking string data.

No. A piano is not a plucked strings instrument and has no string data as would be needed for Tablature

But, you can certainly copy the notes to an instrument that does have meaningful tablature. As mentioned tablature doesn't make sense for piano, but it does for guitar, so if you copy the notes to a guitar staff - or change the instrument to guitar - you can get tab. Whether or not the part actually would be physically possible to play on guitar is another matter.

I have done this with several piano scores but you have to be prepared for some manual re-arranging because piano pieces usually have a much larger pitch range than guitar pieces.
I start with the piano treble and bass and 2 non-linked TAB staves, one for the piano treble and one for the bass. Then it's a case of copy/paste/transpose to reduce the pitch range. Sometimes a key change is required to give you enough range to stop the guitar melody getting mixed up with the bass. Finally condense the TAB staves into 1 and delete the piano staves.
