What do you mean by "default"? "Default" means, something is missing and therefore a default is used. What is missing in your MIDI?

When I open any midi file ... the sound is always grand piano, it seems.
Is there a way to have it always input a trumpet sound instead .... I have to go through a long list of instruments to change.
Seems like grand piano is the default sound ... can it be changed ?
If not .... is there a way to have my most used instruments show at top of list vs bottom of list ?

The sound to use is recorded in a MIDI file.
Unless it isn't, then indeed grand piano is the default.
You can't change that default, but you can change the individual score to use different sounds/instruments

I dont know an option how to re-arrange the sounds in Musescore Basic (or any other soundfont). I think that you need to create you own soundfonts with an appropriate MIDI tool (i.e. synthesizers). Musescore cannot create soundfonts.
